The most famous are chevre (traditional goat cheese), Brie, Roquefort, Camembert and Gruyere. If we had to choose the most characteristic of French cuisine, it would be baguette bread. Some of the specialties are: soupe à l'oignon - a traditional French onion and beef soup, usually served with croutons and melted cheese on top; coq au vin - chicken stewed with wine, mushrooms, salted pork or bacon, mushrooms, onions, often garlic and sometimes some brandy; Nicoise salad - a combination of lettuce, fresh tomatoes, boiled eggs, tuna, green beans, olives and anchovies; soufle au chocolat - airy egg-based dessert, crispy on the outside, with liquid chocolate on the inside.
